Chickpea and Dill Pickle Smash Sandwich

Ingredients:
1 can chickpeas, rinsed and drained, 14 oz.
1/2 cup sliced dill pickles
1/4 teaspoon dried dill
1/4 teaspoon salt
1 carrot, grated
1 cup finely diced cucumber
1 red bell pepper, finely diced
2 tablespoons pumpkin seeds
4 tablespoons mayonnaise
1 teaspoon Dijon mustard
8 slices bread, your preference
Directions:
Add the chickpeas to a large bowl. Use a potato masher to squash.
Add the dill pickles, dried dill, salt, grated carrot, cucumber, red bell pepper, pumpkin seeds, mayonnaise, and Dijon mustard to the mixing bowl. Mash and stir together until combined.
Spread the chickpea mixture on four slices of bread. Place the remaining bread slices on top. Slice the sandwich in half and enjoy!
