Breakfast Chia Pudding

Naturally sweet and good for you!

Ingredients:

1 cup non-dairy milk, almond, coconut, soy
1 Medjool date, pit removed
1/2 cup fresh spinach
3 tablespoon chia seeds
Fruit for topping, banana, berries, kiwi, mango

Directions:

  1. Add the non-dairy milk, date, and spinach to a blender. Pulse until very smooth.
  2. Pour the milk-date mixture into a small bowl or mason jar. Add the chia seeds. Stir together until well combined.
  3. Place in the refrigerator to chill for one hour, or overnight.
  4. When ready to serve, stir the chia pudding and top with fruit.
