Breakfast Chia Pudding

Ingredients:
1 cup non-dairy milk, almond, coconut, soy |
1 Medjool date, pit removed |
1/2 cup fresh spinach |
3 tablespoon chia seeds |
Fruit for topping, banana, berries, kiwi, mango |
Directions:
- Add the non-dairy milk, date, and spinach to a blender. Pulse until very smooth.
- Pour the milk-date mixture into a small bowl or mason jar. Add the chia seeds. Stir together until well combined.
- Place in the refrigerator to chill for one hour, or overnight.
- When ready to serve, stir the chia pudding and top with fruit.
